Slimming world quiche

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Lightly grease a baking sheet or line it with parchment paper.
  3. Lay the tortilla on the prepared baking sheet.
  4. In a non-stick pan, sauté the diced onion and red bell pepper until softened. Add the spinach and cook until wilted. Remove from heat and set aside.
  5. In a mixing bowl, beat the eggs and season with salt and pepper.
  6. Spread the sautéed vegetables evenly over the tortilla, leaving a small border around the edges.
  7. Pour the beaten eggs over the vegetables, ensuring they are evenly distributed.
  8. Arrange the cherry tomato halves on top of the quiche mixture.
  9. Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes or until the eggs are set and the edges of the tortilla are golden brown.
  10. Once cooked, remove the quiche from the oven and allow it to cool for a few minutes before slicing and serving.
