Baked pear and berry breakfast soufflé

Ingredients

  • Low-calorie cooking spray
  • 4 medium Conference pears, halved and cored
  • 1 level tbsp clear honey
  • 5 eggs, separated
  • 1 level tbsp sweetener granules
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 275g mixed berries, such as raspberries, blueberries and halved strawberries
  • ½ level tsp icing sugar, to serve
  • Fat-free natural yogurt or fromage frais, to serve
